Sourdough runs on a schedule set the day before: levain fed, dough mixed, shaped and in the retarder overnight, then into the oven before dawn for the market or the café delivery. An outage at 3am wrecks it. The dough overproves, the oven is cold, and the orders are gone. Cake makers face the same with a wedding cake half baked and buttercream softening in a dead fridge.
A domestic oven, a second wall oven, a deck oven for bread, a stand mixer and a proofer can add up to a serious draw at the same time. The system is designed for 15 kW continuous with headroom for peaks, which covers a well-equipped home kitchen. A commercial deck oven or several large ovens together may need a bigger setup, and that would be worked out honestly in pilot sizing.
The battery and inverter run in UPS mode, so the oven does not drop out mid-bake and the timers do not reset. A tray of croissants or a wedding cake tier that goes in on grid power comes out on stored power without anyone noticing the change.

Retarder fridges, the chiller for cream fillings and the freezer of laminated dough are just as important as the ovens. They keep running too. The system charges on cheap off-peak power or from wind or micro-hydro, and round-trip efficiency is 30% or less, so baking on stored hydrogen costs more than baking on the grid. It protects the orders, not the margin.
It depends on the oven. The system is designed for 15 kW continuous output for an average home with headroom. Larger commercial ovens or several running together may need a bigger or multi-unit setup sized honestly in the pilot.
It is designed not to. The battery and inverter run in UPS mode, so there is no gap for the oven, the proofer or their controls to react to. Test your own appliances during the pilot to be sure.
It keeps fridges and freezers running through outages, which helps protect stock. Food safety rules and your registration requirements are separate, so check those with your local council or registration body.
